MANGO SHRIMP CEVICHE

INGREDIENT

·      1 Pound of raw shrimp (peel, deveined and tail off )

·      1 Small tomato thinly sliced

·      ½ Small red onion thinly sliced

·      1 Fresno chili, seeded and thinly sliced

·      2 Tbsp diced ripe mango

·      ½  Bunch of cilantro chopped

·      ¼  Bunch of basil chiffonade

·      ½  Avocado diced

·      Salt

·      Pepper

·      ½ Cup of fresh lime juice (about 3)

·      ½ Cup of fresh lemon juice (about 3)

·      ¼  Cup of fresh orange juice

·      ½ Tbsp of hot sauce (Cholula or Tabasco)

INSTRUCTIONS:

1-   Make the ceviche marinade by adding orange juice, lemon juice, lime juice, salt, pepper and hot sauce

2-   Cut shrimp into slices and marinade with ceviche marinade

3-   Fold in ½ of the basil and cilantro

4-   Refrigerate covered for 40 minutes making sure that all of the shrimp is covered with the marinade

5-   Once marinated fold in gently the tomatoes, red onion, Fresno chili, mango, avocado, basil, cilantro.

6-   Add salt & pepper to taste

7-   Serve chilled and garnish
